Buyer Guide – Imperia Pasta Maker

Imperia have been making the SP150 Pasta Machine since the late 1920s and it has been used by generations of Italians to make fresh pasta in the home. It comes with a variety of different attachments and accessories to make different types of pasta. This Buyer Guide explains how the machine works and describes the various attachments and accessories and their uses.

Imperia SP150 Pasta Maker

Imperia SP150 Pasta Maker The Imperia Pasta Machine is precision-engineered in Italy, made from heavy duty chrome-plated steel and built to last. It comes with full instructions to make pasta dough and some recipe suggestions.

The machine has two 15cm stainless steel rollers (so it will produce sheets of pasta (lasagne) 15cm wide). The dough is passed through the rollers repeatedly, closing down the gap each time until the desired thickness is reached.

Various different sized cutters can be attached for making pasta of different widths. The basic SP150 Pasta Machine comes with 2 cutters, for making tagliatelle or fettuccine, as well as lasagne.

Imperia Pasta Kit & Pasta Factory

Imperia Pasta Kit The Imperia Pasta Kit (shown, right) includes everything that comes with the basic SP150 and also includes two Additional Cutters, for making spaghetti and lasagnette, as well as the tagliatelle, fettuccine and lasagne. It also includes a 36 section Ravioli Tray and rolling pin for making ravioli.

The Imperia Pasta Factory includes the same set of cutters as the Pasta Kit but instead of the Ravioli Tray there is a Ravioli Attachment to automate the making of ravioli (see below).

Pasta Making Accessories

Pasta Drying Rack Imperia produce a range of different attachments and accessories to help with your pasta making and to make different types of pasta.

A Pasta Drying Rack will save space in your kitchen and help to keep the pasta under control, otherwise it tends to take over the kitchen.

The Imperia Motor Attachment attaches to the SP150 Pasta Machine, taking the effort out of producing pasta in larger quantities. It frees up your hands to control the pasta, producing sheets of uniform thickness. The motor attatchment has two speeds - one for rolling and one for cutting.

Imperia Gnocchi Attachment Use a Ravioli Tray and rolling pin to make ravioli in various shapes and sizes. Or use the Imperia Ravioli Attachment to automate the process. Two sheets of pasta are fed into the top of the attachment, with the filling spooned into the hopper. The handle is cranked to feed the sheets of pasta through, pressing them together with the filling between.

The Imperia Gnocchi Attachment makes different types of gnocchi - Gnocchetti Sardi, Cavatelli or Rigatelli.

Additional Cutters can be added to the SP150 to make pasta of different sizes - Spaghetti, Capelli d'Angelo, Tagliatelle, Linguine/Trenette, Fettuccine, or Lasagnette.

Pasta Presto

Imperia Pasta Presto The Imperia Pasta Presto has a built-in motor which makes the process of making pasta a lot easier and improves the consistency of the pasta. It includes 15 cm rollers for making lasagne and built-in cutters for tagliatelle and fettuccine. It also has a non-stick coating to help keep it clean.

Note that all of the Imperia SP150 attachments will fit the Pasta Presto but they can only be used manually, i.e. by cranking the handle.

Types of Pasta

Using the various attachments and additional cutters, the Imperia Pasta Machine can be used to make the following types of pasta:

  • Spaghetti - A round pasta noodle, 2mm in diameter.
  • Capelli d'Angelo (Angels' Hair) - A flat noodle, 1mm wide.
  • Tagliatelle - A flat noodle, 2mm wide.
  • Linguine (or Trenette) - A flat noodle, 4mm wide
  • Fettuccine - A flat noodle, 6.5mm wide
  • Lasagnette - Flat strips of pasta, 12mm wide.
  • Lasagne - Sheets of pasta layered with a meat or vegetable sauce and baked in the oven.
  • Cannelloni - Sheets of pasta rolled into tubes with a meat or vegetable filling and baked in the oven.
  • Ravioli - Parcels of pasta in various shapes and sizes with a meat, cheese or vegetable filling.
  • Gnocchi - Small pasta dumplings made from a flour dough (Cavatelli) or a flour and potato dough.
